Coming from the shīfu (师傅) collection, the chinese cleaver is a traditional and incredibly versatile workhorse around the kitchen, capable of handling every task with ease, from dicing dozens of onions to prepping an entire family barbecues' worth of meat.
The large size allows scooping ingredients off the board, while the flat edge encourages a forward/backward straight-cutting motion.
